The company, which is located at 700 meters above sea level in the alpine valley of Valcanale, was founded in 1990 and since then Luigi has been cultivating fruits and vegetables according to controlled and certified organic methods. These products, collected during the summer-autumn months, are transformed in the food laboratory located in Pontebba to create compotes, jams, syrups, preserves in oil or in a sweet-and-sour mixture, sweet and savory creams for various combinations. In addition to these productions, wild mountain herbs such as wild garlic, mountain garlic, dandelion and wild chicory, silene and “Radic di Mont” are also collected and transformed into food preparations. The goals that Luigi sets himself are the continuous on-site research of old recipes and the subsequent re-elaboration and creation of new products, for the recovery of popular culinary traditions which are the result of respect for the raw ingredients and a careful study of the preparations.
