Gregorio has a degree in Animal Production and has long since taken over the reins of the business that his father had started in the early 1980s. Determined to broaden his vision, Gregorio continued the rabbit breeding activity and at the same time created new opportunities: he is the proud creator of “cunicici”, cevapcici made with rabbit meat. However, he did not limit himself to this. In fact, he decided to start growing Cipolla rosa della Val Cosa, a Slow Food presidium, and in 2014 he opened the laboratory, where he produces preserves in oil and pickle, syrups and jams. The attention to research and study of recipes and the non-ordinary nature of the proposals are the company’s greatest strengths, which push word of mouth and attract the attention of restaurants. Customers appreciate the finesse of the products and the local origin of the raw ingredients, which allow them to rediscover authentic flavors albeit in a modern way.
